Shakshuka
Here is another recipe to make when you have an abundance of tomatoes. I found it in Vegetarian Times. I am not a vegetarian, but there are a lot of times we don’t eat meat as we get plenty of protein in our diets from other sources. This is an Israeli staple and can be made for any meal. Shakshura This recipe only takes about a half hour, though you can prepare sauce in advance and...

Heirloom tomato salad
This is the time of year where many of us have lots of tomatoes ripening. I started most of mine by seed and then the markers got mixed up so when I planted them, they became mystery tomatoes. Since our summer started on the 5 th of July, everything really got a late start. This recipe is one of my all time favorites. I discovered it several years ago. I always get asked for the recipe. It is...

Kale salad with tahini dressing
I am getting back on track after a moratorium. Will try to do a better job of blogging my favorite healthy recipes. Some I just make up and others I find in various places, magazines, on line and some in my cache of Mediterranean cookbooks. Today, I am sharing a wonderful recipe for a dressing that goes well with raw kale. Hope you enjoy it!! Kale with Tahini dressing This works best with...

Moroccan Chicken Stew
Being laid up, I haven’t been doing much cooking. Standing on one leg and chopping, not so easy! I am getting better, so today, I am trying to work my magic in the kitchen again. Working on some new recipes to try and share. My family loves the curried carrot soup so much that they made it twice during my recuperation. So, are you ready for a great new recipe? Very healthy? Here goes!! ...

The American Way of Eating by Tracie McMillan
Just purchases and started reading this book. Another expose on America and our eating habits. So far, so good and quite interesting. I know the right is not happy with it.

Warm white bean & Herb spread or what to bring to...
This week I am thinking what to bring as an appetizer to Erin’s candle party on Saturday.  This is a wonderful alternative to hummus. This is so good and the tarragon gives it a great bite.  You can use it as a vegetable dip or as a spread on a baguette.  You can also add it to steamed vegetables where it makes a kind of a sauce. It calls for Rosemary, but I like Tarragon. Warm white bean...

The weekend ahead
I still haven’t completed my menu for this week. Watching the little girls tomorrow for a few hours so Erin can have some adult time. That means I need to get on the stick and figure out what to make. We know there is quinoa in my future, some roasted vegetables and kale, beans and hummus. Maybe some sweet potatoes? Braised greens? If I win mega million, I can get a personal chef!!

What do you make when you have a bad cold and very...
I have been sick for the last few days and not feeling like cooking much, healthy or otherwise. That said, I had some fixings to make a veggie and chicken soup. Here is what I put in it. I cut up carrots, celery and chopped a couple of cloves of garlic, a couple of leeks and sautéed them in olive oil. Then I chopped a parsnip, rutabaga, turnip and a couple of potatoes and threw them in the pot...

Roasted Brussels Sprouts with grapes and Walnuts
Think healthy and wholesome when you think of the recipes I share. This is another fun and healthy recipe that is not only  vegetarian and vegan, but also interesting. I know not everyone likes brussels sprouts, but here is an opportunity to make them a little differently. They are soooo good for you, plus the balsamic makes them sweet and the walnuts add protein. I always play with my...

How about some awesome Curried carrot soup?
Busy weekend, so not too much time to get away from cooking to post the food of the week. What do you do when you buy a 5 lb. bag of carrots at Costco and then realize, there is no way we can eat all of those carrots before they go bad?  You find a recipe that uses LOTS of carrots!! I have a great cookbook that is just vegetables and voila, a recipe that uses about 1 1/2 lbs of carrots!...

Chicken nuggets the healthy way!
This recipe is for my daughter and grandkids! The girls love those nasty chicken mcnuggity things, but we all know they are so not good for you. Just the other day, she was telling me that she has too much ground turkey in the freezer and needs to find a way to use it up. I found this recipe and it looks like it will work. As far as dipping sauce, she is on her own!! I was thinking she could...

Quinoa Tabbouleh, what to bring to a potluck
Always the question, what should I bring to the potluck or party? This can be especially difficult when you are eating healthy. You want to make things that not only you will eat, but that there will be others who will enjoy it, too.  Tabbouleh can be made in a variety of ways, but if you are eating gluten free, bulgur will not fit the bill, but quinoa will. Here is a recipe that I will be...

Hummus is the greatest!!
I so love hummus. I have begun making it every week to bring to work and snack on with carrots and celery. I usually take about 2 TBS with me with a baggie of veggies and eat them in the afternoon when the doldrums set in. You can make it in so many ways. I just like the plain or the garlic one, but today, I made it with roasted peppers.  All yummy and extremely good for you. I found a tahini that...

Mushroom Broccoli or Asparagus Quisotto
Over the last few years, I have been reading about quinoa, the super grain. What makes it so good? High in protein and gluten free. Can be used a lot like bulghur.  I really enjoy this recipe and it heats up nicely for lunch. I decided that I would try it and see if it would be worth making since my spouse has never been known for his creative eating.  Quinoa is also inexpensive. I just purchased...
